Christmas Cakes
Delicious sweet Christmas cakes as a sweet dessert or in the afternoon with coffee. A recipe from the Romantik Hotel Zur Schwane in Volkach, fresh from chef Hendrik Friedrich's own kitchen. Have fun baking during the most beautiful time of the year.
For all lovers of fragrant cinnamon, almonds and chocolate, these little cakes are an absolute dream! With a moist, spicy dough and finished with a shiny chocolate icing. Perfect for the Advent season! The Romantik Hotel Zur Schwane wishes you bon appétit and a wonderful Christmas season.
Ingredients
- 70 g flour
- 100 g grounded almonds
- 250 g sugar
- 250 g butter
- 1 EL honey
- 240 g egg white
- 2 g cinammon
- a litte bit of salz
- 200 g dark chocolate
Instructions

Dough
1. mix the flour with the ground almonds in a bowl
2. add the sugar, cinnamon, salt and egg whites and mix with a whisk
3. put the butter and honey in a pan and heat up, as soon as the butter is nice and hot, add it to the batter, stirring constantly
4. chill the whole mixture for approx. 2 hours. During this time, chop the chocolate into small pieces and melt in a bowl over a bain-marie

Baking
1. preheat the oven to 180° fan oven
2. stir the chilled dough well after it has rested and fill into small moulds, there should be no more than 50g per mould
3. bake the dough in the oven for approx. 10 minutes, after this time test with a wooden skewer to see if it is baked through. Nothing should stick to the skewer
4. leave the small cakes to cool for 2 hours and then garnish with chocolate and, if you like, decorate with Christmas sugar pearls.
