A modern interpretation of the traditional!
The 300-year-old inn in Nuremberg with its half-timbered structure is considered a Franconian cultural asset. In the wood-paneled parlors or under the linden trees in the garden, contemporary table culture is combined with history and pleasure. The seasonal taste cuisine treats you with products from the region and was expanded in 2018 with the gourmet restaurant Waidwerk. Spend a few beautiful days to relax and enjoy - the modern four-star hotel with 37 rooms invites you to stay.
Your Host
For the host family Rottner it is a heartfelt desire to offer you a harmonious and comfortable stay. Here the entire family lends a hand, after all, the inn is already owned by the fourth generation of the family. And while host Claudia Rottner takes care of the wine list as a sommelière, husband Stefan has been in the kitchen of the inn since 1985 and serves regional seasonal cuisine. Son Valentin treats his guests as head chef in the gourmet restaurant "Waidwerk" and Lisa Rottner-Jahn is responsible for hotel operations as well as events.

Sustainability Sustainable & Regional
For star chef and host Valentin Rottner, tradition and sustainability have a special meaning. The compositions in the gourmet restaurant Waidwerk are based on fresh and regional ingredients. After Valentin Rottner went hunting with his grandfather as a child, he took his own hunting licence at the age of 15. So you can be sure that the meat comes from the region and that the animals have lived in a species-appropriate way. In addition, the control of wildlife populations through hunting enables the tree populations in the local forests to recover.
